~The Moosewood Cookbook that arrived just a few weeks ago from PBS
~ Simple, easy recipes I can memorize after the first go around with ingredients we always have on hand- flour, eggs, salt, milk
~ Any simple meal I can individualize- egg batter is evenly distributed into each muffin cup- now who wants what added?? Sun-dried tomatoes, cheese, olives, ham, basil...
~ In 40 minutes (35 of which is in the oven) we have a fun, healthy, filling meal

Custard Popovers thanks to Moosewood Cookbook
1 c unbleached white flour
1 c milk
1/2 tsp salt
4TBS melted butter
Preheat Oven to 375
Beat eggs and milk, add flour and salt, mix well
Put muffin pan into oven while oven is preheating.
Once hot, brush melted butter into the muffin tins, and pour egg mixture in evenly.
Add cheese, ham, cooked veggies, sun dried tomatoes, olives- what ever you want to each muffin.
Put tin in oven and bake for 35 minutes. DO NOT OPEN THE OVEN DOOR. Turn the light on if you're curious.
Serve with yogurt, applesauce, a salad, or just as is.
